This course provides you with the knowledge in the stages of food production and the ‘farm-to-table’ movement of cooking local food and providing it to local customers. You will research your local farmers, farmers markets, and CSAs, and indigenous local produce. You will create meals consisting of local in-season vegetables with various cooking techniques. Additionally, you will learn food preservation techniques including fermenting, pickling, and canning, and learn to market and sell your preserved foods. PREREQ: HN 221-OL
